Workers make wooden bungs by hand to fit the old wooden foudres at Mayacamas Vineyards on Mount Veeder in Napa, California. One of Napa’s most historic wine estates, Mayacamas has long used huge, ancient wooden vats for wine aging, rather than the smaller barrels of new French oak that are popular today. The use of old foudres and an emphasis on early-picked grapes has given Mayacamas wines a distinct character much more aligned with the Napa Cabernets made in the 70s than the powerful, dense wines of today.
